Vacuum packaging
Vacuum packaging is to put food into a special packaging container, take out gas in it with vacuum pump, and seal, and when the gas in the container is pumped out, vacuum environment is formed. Its characteristics are: low oxygen voltage and low vapor content thus it may prevent food from oxidation, moldy and decay, it may also avoid changing color, fading, decreasing loss of Vitamin A and C to prevent color, aroma and taste of the food from changing.
The chief functions of vacuum packaging are to ensure storage period of food, which are as follows in details:
1. Prevent drying. Packaging material obstructs water vapor thus prevent drying in order to keep meat appearance soft.
2. Prevent oxidation. While pumping vacuum, oxygen and air is discharged together, packaging material and atmosphere shield, oxygen can’t flow into packaging bag and oxygen is completely rejected.
3. Prevent increase of animalcule. Bacillus and barm seriously influence food quality, their metabolic outcome has poisonous side effect to human body and makes food decay. Products packed by vacuum packaging can prevent second pollution of animalcule and survival of aerobe.
4. Prevent aroma loss. Packaging material can efficiently obstruct transgression of volatile aromatic substances; it can also prevent tainting by odor among various products.
5. Avoid freezing loss. Packaging material can separate product apart from outside, therefore ice and air-dry while freezing can minimize the loss.
6.Prevent being touched by person. Ensure products can meet buyers sanitation needs.
Vacuum packaging is mainly applied in the following products:
1.Corned products: sausage, ham, preserved ham, salted duck, etc.
2.Edible products: preserved szechuan pickle, dried turnip, pickle vegetable, etc.
3.Bean products: dried bean curd, vegetarian chicken, sweetened bean paste, etc.
4.Instant food: rice, delicatessen food, etc.;
5.Delicatessen food: roast chicken, roast duck, fermented beef, etc.
6.Meat products, etc.
